If you are going to opt for quick and easy then being able to purchase most of the ingredients already made or already cooked with their spices and seasoning makes cooking very easy for busy weekdays. For this particular recipe I bought Hormel’s already seasoned taco meats. This one in particular is Hormel Taco Meats Shredded Chicken. You can also make your own seasoned shredded chicken by boiling chicken breasts and thighs and seasoning with taco seasoning or using an equal mixture of chili powder, cumin, garlic and onion. Cook your chicken when you meal prep for the week and weigh out 3 oz portions per person into storage bags or containers. They can easily be placed on chicken in burritos, soups or any other dish that uses chicken. When boiling chicken you can also save the chicken broth.

1 Can of Whole Kernel Corn
You can add anything that you want to the burritos or wraps. I added shredded cheese, sour cream, romaine lettuce and avocado.
In a saucepan, sautee chicken in one TBSP of oil. Add the drained cans of beans and corn and sautee for 5 minutes until beans are dry and thicken. Cool. Once cool, spoon bean mixture into the middle of a tortilla. Then add any additional ingredients to make up your favorite burrito or wrap.
This makes a lot of filling and each burrito is under 400 calories.
