Last week I started a Green Smoothie challenge. Incorporating green salad smoothies into my daily food regimen and incorporating cleaner eating. I thought this would be a good time to offer up easy to make salads to Dallas Single Mom readers. Having a big salad for one of my daily meals and incorporating them with my green smoothies not only provides great nutrients but also helps me in my lifestyle change and weight loss.
Salads are healthy and delicious, but they get old really fast. It gets boring eating some lettuce mixed with a few veggies and the same old salad dressing. Most people don’t know how to make any other types of salads. If you’re interested in learning how to make some new salads, here are some recipes that you need to try and my top 5 salads this month.
Avocado, Black Bean & Corn Salad
This power salad is completely different from a traditional salad and absolutely delicious. It doesn’t even contain lettuce! To make this salad, you need:
Cherry tomatoes, halved
Red onion, diced
Avocado, pitted and sliced
All you have to do is mix the desired amount of each veggie together and top with some sea salt and fresh ground pepper. If you’d like to add a dressing on top, you can make your own cilantro lime dressing. All you need is:
1 juiced lime
¼ teaspoon garlic salt
If you’d like a little kick to your dressing, you can add a pinch of cayenne pepper. Mix it all together and then thoroughly mix the dressing into your salad. You can eat the salad the way it is or even scoop it up with tortilla chips when you want an extra treat.
Southwestern Chopped Salad
The Southwestern chopped is a filling and delicious salad that is packed with flavor. This salad includes:
Orange bell pepper
If you make the avocado and black bean salad, you can just make extra. Simply add the grilled chicken, tomato, orange bell pepper, and romaine lettuce to the salad you already created. There are many things you can do for salad dressing. A chipotle dressing would taste incredible on this salad. To go a healthier route, choose something natural like the Hampton Creek Chipotle Just Mayo. All of their flavored mayonnaise options make delicious salad dressing.
Cilantro Lime Chicken Salad
Cilantro lime chicken is a popular meal that is often made with mango salsa on top. This common dish can be easily transformed into a salad with the same ingredients. All you need to do is add some lettuce and peppers. First, make a delicious marinade to soak the chicken in. The ingredients include:
3 limes, squeezed
2 tbsp cilantro, chopped
1 tsp salt
½ tsp chili powder
1 tsp brown sugar
2 garlic cloves, crushed
Mix everything together and pour it into a large sealable plastic bag. You can put some of the marinade to the side if you want to use it as salad dressing once the salad is finished. Add the chicken breasts and put in the fridge to soak for at least an hour. After 30 minutes, flip the chicken.
For the rest of the salad, you need:
Red bell pepper, sliced
Romaine lettuce, chopped
Mix all of the ingredients of the salad together except for the red pepper. Wrap the sliced peppers in aluminum foil to grill along with the chicken. Grill the peppers and chicken until they are finished, slice the chicken into strips and add to the salad. Add the remaining marinade to your salad or just use some fresh squeezed lime and sea salt.
Tomato & Cucumber Salad
Tomato and cucumber salad is easy to make. It’s great for a light lunch of even a side with dinner. There are many different ways to make this simple dish. One way is with red onion and feta cheese. The feta cheese block works best because you can dice it, but crumbles will work as well. All you need to do is mix it with diced tomatoes, cucumbers, and red onion. Pour a little red wine vinegar and olive oil the top, sprinkle on some minced garlic, and salt and pepper to taste.
Another delicious way to make this salad is with mozzarella cheese. You need to buy the fresh mozzarella, You can often find balls of it in a liquid in a plastic container. You can chop it up just like the feta and add it to the tomato and cucumber. Mozzarella is better with Italian dressing than the garlic. Drizzle the Italian salad dressing on top and mix it all together.
Chicken Avocado & Bacon Salad
The chicken avocado and bacon salad is delicious for lunch or dinner. A honey mustard dressing tops it off and adds the perfect flavor to the chicken and the bacon. This salad is just a mixture of romaine lettuce, red onion, corn, avocado, and tomatoes. Grill or bake your chicken with the seasoning of your choice, cut it into strips and add it to your salad. Fry bacon on the stove until it’s crispy and cut it into squares. You can even cook the bacon until it’s extra-crispy and crumble it like bacon bits if you prefer. To make the dressing, just mix 1/3 cup of honey with 2 tbsp Dijon mustard.
As you can see, there is more to salad than just lettuce, tomato, and ranch dressing. Make sure you try some of these salads that you never would have thought of on your own.
