Scrambled eggs are the ultimate fallback breakfast because they are quick, warm, and endlessly customizable. He has shared that it tastes smoother and lighter than sour cream or full fat yogurt, with a gentle tang that makes the eggs feel more refined. The real secret is when you add it. Miller’s advice is to wait until the very end and take the pan off the heat before stirring crème fraîche in. To try it, whisk your eggs in a bowl and cook them over low to medium heat, stirring gently so the curds stay soft. Some cooks take their time with this method, but you can still get a velvety result in minutes if you keep the heat moderate and stay attentive. When the eggs are almost set and still look slightly shiny, remove the pan from the stove. Add a small spoonful of crème fraîche and stir continuously until it disappears into the eggs.

The goal is creamy and plush, not heavy, so add it gradually and stop when the eggs look smooth and feel soft.
