My experience with Tasteful Selections potatoes has done so many things for making meal planning and portion control a cinch. I have found that Tasteful Selections are just the right size to create an easy snack or a meal. Making a lot of them at once and then experimenting with different seasonings can make a healthy snack more fun and add more zest to simple run of the mill side dishes. For this particular dish I was actually trying to make breakfast but ended up making a stir fry instead. What’s great about these potatoes and this recipe is that you can still add 4 organic eggs to leftover and have a great meal. That is how I like to cook. As a single mom I think of the longevity of a dish and what I can do with meal leftovers. Leftovers can be whipped up into something fantastic for the next day. One of my favorite things to do is just put it in a tortilla and a quick meal is served.
For this recipe I used the honey gold Tasteful Selections potatoes. It’s their signature flavor and it has a buttery, sweet taste with velvety golden flesh and delicate skin. It’s available in their 24 oz. 1-bite, 28 oz. 2-bite, and 40 oz. 3-bite packages. What I did was slice each potato in half, marinated them and prepared in the microwave according to package directions. That’s what makes these potatoes so easy is that you can use the microwave and save on energy costs not having to roast in the oven. I used about 1/2 of the 24 oz bag. I marinated the potatoes in a roasted garlic balsamic dipping oil. You can either make your own or buy a bottle of that stuff. Roasting them or microwaving them in that matter creates an easy snack or side dish. For the dish I’m preparing I love the taste of garlic. If you like spice you can always add chili flakes to the mixture.
- 1 tablespoon coconut oil, olive oil or butter
- 2 cloves of garlic – minced
- 1/2 yellow onion, chopped
- 2 links turkey or chicken sausage sliced {or approximately 1/2 cup already cooked ground sausage}
- 1/2 bag of sliced and microwaved Tasteful Selections honey gold potatoes (as prepared with the roasted garlic balsamic dipping oil)
- 1/2 medium zucchini
- 1/2 bell pepper
- 2 cups fresh spinach
- 2 cups fresh kale
- 1 cup sliced mushrooms
- 1/2 cup of vegetable or chicken broth
- salt, black pepper, garlic powder to taste
Heat oil or butter in a saute pan. Add garlic and onion and sautee until the onions are translucent. Then add the sausage and sautee for 5 minutes. Add the the roasted Tasteful Selections Potatoes, mushrooms, zucchini and bell pepper and sautee for another 5 minutes.
At this point you add the fresh spinach and Kale along with the broth. You don’t have to use the broth but it helps to cook the greens. At this point you will salt, pepper and garlic powder to taste. You don’t want to add too much broth or your stir fry is runny. Stir fry for another 5 to 10 minutes.
Now you have an easy summer dish that includes a lot of great vegetables and great nutrients from the potatoes. This dish has a lot of flavor and you are not using any soy sauce or oyster sauce which comes with a lot of sodium. The flavor comes from the broth and the garlic.
Leftover Tip: Create a breakfast scramble the next day. Drain the broth if any that is left in the pan. Store in the refrigerator. When you wake up the next day you can throw this stir fry back in the pan and add beaten organic eggs. Now you have an easy breakfast as well.
