We grow up on Eggo Waffles and I buy them in bulk regularly because they are the easiest things to eat when I need something quick and I am on the go. I had never thought of using them in different recipes besides the traditional breakfast menu item. I was challenged and inspired to take another look at Eggo Waffles and see them in a completely different way. I wanted to incorporate a twist of BBQ and sausage into a unique brunch style sausage cup shaped by Eggo Homestyle Waffles. The result? Amazing and easy to bite into.
I was not short on ideas. When I heard the Eggo Waffle Bar Truck was making a stop at various Walmart locations in the Dallas-Fort Worth area I knew I had to stop by. I am so glad I did and you should stop by as well if there is one in your area. They started this past April and will move a total of 200 times in just over 100 days. That’s a lot of miles and a lot of Eggo Waffles.
When I attended the one at the North Irving, Texas Walmart I got a lot of ideas on what kinds of toppings to include in my very own Waffle Bar. It was a treat and a delight to spin the magic wheel and get surprised on the kinds of toppings I could get on my waffle. Hungry Jack Syrup, Breyer’s Ice Dream, Jif Peanut Butter, Redi-Whip, Mini M&Ms, Fresh Berries and Smucker’s spoonable hot fudge are just some ideas for waffle toppings.
All of these wonderful waffle toppings inspired me to create a waffle bar for Mother’s Day. I had taken the kids to amusement park on Saturday and so Sunday was for my future mother in law. We decided on creating a waffle bar for the holiday. Everything I needed I knew I could get at Walmart. The main theme and ingredient was Eggo Waffles and so off to shop we went.
I browsed the aisles and picked up Eggo Waffles I had never tried before. We usually get Homestyle, Blueberry and Chocolatey Chip. This time I picked up some Eggo® Nutri-Grain® Blueberry Waffles, Eggo® Cinnamon Toast (Kids loved these will be getting more in the future), and the Eggo® Minis Waffles. Who knew there were so many varieties? Delicious News! Eggo waffles now have no artificial flavors and colors from natural sources. None! Zip! Nada! These made a perfect fit for the Mother’s Day Waffle Bar.
I created the Texas BBQ Waffle Sausage Cups for the event – the main attraction. Esther, my future mother in law, was in awe at the effort I put forth to make this brunch and this event very memorable. I have so much easy recipe ideas and toppings I included in the waffle bar – along with a meat and cheese platter. All finger foods and easy to pick up items that can easily be placed atop a waffle. I will share my other recipe ideas on future blog posts but I wanted to share the recipe for Texas BBQ Sausage Cups with you – I added a little bit of spicy kick at the end. The blending of the slightly sweet Homestyle Eggo Waffle along with the spicy and tangy BBQ sauce marinating the Banquet Maple Flavored Sausages.

For this recipe I used Eggo Homestyle Waffles. With so many varieties you could use the many different flavors of Eggo Waffles.

Then just arranging them on your breakfast bar gives people a variety.
The key to a great waffle cup is to cut the normally round waffle into a square. You do this by trimming the edges to create a square. Grease your muffin pan and create a crimpled waffle cup by stuffing into each muffin portion to create a cup. That is the easy part. You can always use leftover Waffle Trimmings for your waffle bar (chocolate covered waffles sticks). You can do it that way or use a biscuit cutter or the mini waffles. For this recipe I used the regular sized homestyle waffles. Then we create the Texas BBQ Sausage Stuffing.
For the sausage I sliced 12 sausages, cooked them according to package instructions (Sauteed in Water) and then marinated and sauteed them in a special BBQ Sauce. For the sauce I used Great Value BBQ Sauce and mixed in some hot sauce and strawberry preserves. Then I chopped up one bell pepper and half of a large onion and sauteed with the sausage.. Then I added in some parsley, and seasonings. For the seasoning I added in 1 tsp of garlic powder, 1 tsp of onion powder and 1 tsp of Italian Seasoning. Mix the sauce and the stuffing ingredients together and stuff the waffle cups. See the process in the video below.
Making a signature Waffle Bar Experience
I think what we enjoyed the most was having a variety of different items to choose from on the Eggo Waffle Bar. I had a berry butter which combines frozen berries and butter that can be added to Eggo waffles. I also included Jif Peanut Butter and create an easy Eggo Waffle with peanut butter, sliced almonds and honey. When we brought the ice cream, Smuckers Hot Fudge Topping and Redi Whip it was easy to accommodate everyone’s different tastes and palates. Using a variety of fruits, candies, meats and cheeses make a great variety for a successful Eggo Waffle Bar at home or at your next party.
